Diet Coke Brownies

It's safe to say that this little gal has the biggest sweet tooth you can imagine. 

But...  at the same time, I also like to eat a healthy diet, so I'm constantly looking for low-fat ways to satisfy my chocolate cravings. 

Well bloggies, this is a great way to do it. 

Introducing le Diet Coke brownies:



You may have heard of these babies before. 


I will say that I know that the aspartame in diet sodas is awful for your body, but personally, I don't think that one can of Diet Coke in a large batch of brownies would do much harm!  I may eat my words, but I'd rather have a fraction of aspartame in my system than all of the fat & calories in full-fat brownies! ...and it's not like I eat brownies on a daily basis, so...

...back to the recipe.

Seriously, this is my kind of baking because I'm quite the "undomesticated goddess."

All you do is put your choice of brownie mix in a bowl, empty in a can of Diet Coke, then stir away. 

That's it! No eggs, water, etc. 



From this point, just follow the baking directions on the back of the box to find out how long you should leave them in the oven. 

I've heard that you can mix fat-free Cool Whip and sugar-free dry pudding mix together to create a frosting.  

I prefer to take a warm brownie and a scoop of sugar-free vanilla ice cream (or frozen yogurt!) ...then add a tiny bit of chocolate syrup (come on, that's a must!).

They aren't quite as fudge-like as full fat brownies, but you can't really tell if you eat them with ice cream!

  1. Eeek girl I figured someone into health and fitness as you surely knows how terrible Diet coke is for you! I gave it up cold turkey over a year ago after a doctor gave me a piece of paper of what it does not only to your insides but what it does to toilet bowls (covered with suran wrap) rust on cars..etc etc.. you can google it if ya don't believe me!

  2. Yea, I've heard of using diet soda before! My friends used to do it with cupcakes as well and you really can't tell the difference! I haven't tried it myself but I will at some point. I agree with you, its only a little bit your ingesting so go ahead and use the diet soda! Its better than drinking a whole diet soda right?

  3. Wow, I've never heard of this recipe, but that sounds so easy that even I could do it! I agree with you, I never even drink soft drinks (I just hate the carbonation taste), but I def don't think one can is gonna kill you. Thanks for the easy awesome recipe!

  7. Did you make this? How was it? I might have to try it just out of curiosity. I gave up Diet Cokes about two years ago...but I still cave and have one now and again. Like today... lol. Had to get one with my salad at lunch because I was crashing and needed the caffeine!
